Herbed Zucchini
2 C. zucchini, thinly sliced
ane medium onion, thinly sliced
1/2 medium light-green pepper, chopped
ane T. olive oil
ane T. fresh basil, snipped fine
1/2 t. salt
dash of pepper
ane clove garlic, minced
ane medium tomato, peeled (if desired) too cubed
Combine all ingredients except tomatoes inwards 2 qt. casserole. Cover.
Microwave on high iv - five minutes. Stir inwards tomatoes. Cover. Microwave
on high ane - 2-1/2 minutes.

Zucchini Bread
Preheat oven to 350 F
Combine dry out ingredients:
iii C flour
2 t cinnamon
½ t nutmeg
ane t baking soda
½ t baking powder
½ t salt
Combine separately inwards a large bowl:
2 C sugar
2 C shredded zucchini
½ C vegetable oil
2 eggs, lightly beaten
ane t vanilla
2 t molasses
One pinch or 2 of lemon zest
ane C of chopped nuts (optional)
Mix dry out ingredients into the 2nd bowl of moisture ingredients too stir until combined, bend inwards the nuts. The recipe makes 2 8x4 loaves, grease the loaf pans too pour inwards the batter.
Bake inwards 350F oven for 50-60 minutes, until a knife inserted nearly the center, comes out clean. Let the loaves cool inwards the pans for 10 minutes too thence take away loaves to a cooling rack. Enjoy!
Chocolate Zucchini Bread
Mix these ingredients together yesteryear manus :
